Mexican chicken pizza

So today I cleaned out the fridge. It was a task long overdue, as is a good trip to the grocery store. This recipe is a total slacker trip, but it worked in a pinch and made good use of the foods I had leftover.


1 gluten free pizza crust
1/2 Cup of daiya shredded mozzarella cheese
4 tablespoons of organic refried beans
8 beyond meat southwestern chicken strips
1/2 cup of organic mild salsa
2 tablespoons of taco seasonings
One or two tablespoons of just mayo
Fresh cilantro, chopped sprinkled to


Spread the salsa on to the pizza crust. Place chicken strips on top of the salsa, one strip per slice. Drop refried beans on to mixture in small tablespoons around the pizza evenly. Sprinkle with taco seasoning and cover with cheese. Bake in the oven on 375 for 15 minutes, remove, let cool slightly, then top with just mail, and sprinkle cilantro on top. Slice into 8 pieces, serve and enjoy! Then, maybe go grocery shopping šŸ™‚
