Shadow Boxing The Apocalypse, Wandering the Land…

Hi there! I want to tell you a little about myself and why I am creating this blog. To follow is the story of how I became the person I am today and the impact of diet, exercise, nature, holistic healing and natural medicine and it’s curative effects on health, disease and mental well-being.

About 10 years ago, almost to the day, I returned from a 2 month journey to Tibet. While it was a life-changing journey for me, I became very ill while there. Giardia, food poisoning and a raging stomach infection wreaked havoc in my body and I was horribly ill for quite a while. Finally, after about a month of healing, I thought things were back to normal and I resumed my daily activities. My days usually involved a heavy amount of hiking and one particular day stands out in my memory. I had returned home after my usual 4 mile hike and noticed that I had unusually sore and slightly swollen knees. This hadn’t ever happened to me before so it was a little strange, but I dismissed it. For about 3 hours. Then, over the course of 24 hours, more parts of my body started to swell and freeze up with pain, and within a week, I was nearly paralyzed from the neck down. I couldn’t feed myself, shower and even getting to the bathroom was impossible without help. The agony in my joints was terrifying. At the time, my partner was a grad student and also an EMT, so I was fortunate enough to have compassionate care as we tried to figure out what was going on in my body.

The next few months was a blur of doctors, hospitals, wheelchairs, steroids, painkillers and blood tests. Nobody could figure out what was wrong with me and the pain worsened over time. I was mostly bedridden and terrified. I had sores on my feet and hands, my eyesight was blurry and I was experiencing heart palpitations. The drugs didn’t work, there was no diagnosis and no cure in sight. On top of all this, I had a bleeding ulcer to contend with, and I couldn’t keep any food down. It was pure hell. Finally, one doctor, a Cambridge rheumatologist, thought that I might have a type of bacterial-reactive arthritis and gave me a test for a rare, autoimmune disorder called, “Reiter’s Syndrome”. Turns out, that’s what I had.

After finding that steroids made me completely insane and painkillers just made me groggy and depressed, I began to explore other options. A recent move to Marin County, CA enabled me to seek the help of friends, healers and the local organic markets in my journey towards the awareness of an all organic, vegan diet and holistic therapies and it’s effects on health. It took a lot of research, change, hard work and a commitment to not give up, but I’m happy to say that not only did it work, but it changed my life completely.

Battling a disease is so difficult. By the time I tried this major life change, I was hopelessly depressed. I had gained 75 pounds, my partner had left me, I was alone, isolated and sick all the time. I never thought I would recover and had little hope that things would ever change. Boy, was I wrong. After changing my diet to eliminate gluten, meat and dairy, I lost most of the weight I had gained. I climb mountains, laugh with my friends, travel, dance, bicycle and enjoy life to it’s fullest, without the slightest trace of relapse. I gave up a corporate career in order to pursue one in the holistic healing field because that is what saved me. I love my life now, and never once looked back.

So, now you know a little but more about me, and what made me decide to write this blog. My purpose here is to provide simple gluten-free, vegan recipes that are easy and fast, but also delicious. I’ll be honest, I hated the idea of giving up meat. So my objective was clear, to make meals that don’t make you feel you are sacrificing on hearty, filling dishes in order to be healthy. I also try to eliminate soy out of my diet, (I’m slightly allergic to most processed soy), but occasionally use products I trust which contain it. I enjoy a variety of mostly organic cuisine, smoothies, salads, meat substitutes and the like, all gluten free and vegan.

I plan to update this blog on a regular basis and hope it will be helpful for anyone considering the health benefits of switching to any of the above-mentioned dietary modifications. Trust me, it will be delicious.
